Roasted Cauliflower

I am a little bit obsessed with cauliflower at the moment.  I can’t get enough of it.

I had been gobbling up the cauliflower and parmesan soup I made the other day but I wanted to try something new.  So last night we roasted some cauliflower and it was delicious! Give it a go, you won’t be disappointed.

Roasted Cauliflower

Serves 4 as a side dish

Ingredients

1/2 large head cauliflower

1-2 cloves of garlic minced

Olive oil

Juice of half  a lemon

Salt

Parsley, finely chopped 

Parmesan, grated

Method

1. Preheat oven to 200 degrees celsius

2. Cut cauliflower into florets and place on baking a tray

3. Drizzle olive oil and lemon juice over cauliflower.  Add the garlic and salt, toss gently

4. Roast for approximately 25 minutes or until browned on top and tender when tested with a fork

5. Remove from the oven and sprinkle with parsley and parmesan.  Serve.
